Easy to make Oat Breakfast Biscuits

Our very quick, simple and easy to make breakfast biscuit that is high in taste and low in sugar. Great with your morning cup of tea, a healthy snack or use as accompaniment to a fresh fruit salad.

Ingredients: 100g butter, softened

25g soft brown sugar 1 medium egg (beaten)

125g Apricot & Cranberry Bircher Muesli Mix

75 g wholemeal flour (plain) 1/2 tsp baking powder

How to make:

1) Preheat oven to 180c, gas mark 4. Line baking tray(s) with baking parchment

2) Whisk butter & sugar together until pale and fluffy. In a separate bowl mix all other ingredients together and then mix into the butter mixture. This will make a firm dough. Pop in the fridge to chill for 10-15 mins

3) Using a floured surface, roll out the dough to approx. 1cm thick. Using a pastry cutter or knife, cut out approx. 12 biscuits. Place on baking tray(s) and bake for approx. 15-20 mins until golden. Cool slight then transfer onto a cool rack.

Once made, store in an airtight container. These biscuits have a slightly soft ‘cookie’ type texture.
