The article is in a regular monthly feature of women who have changed career directions and how they have fulfilled their dreams, ambitions, aspirations, and the challenges faced.

The magazine has some great facts,  health and wellbeing information, shopping, fashion plus recipe ideas. This month also has a feature on Dawn French too.

I’m a Finalist!! Heart of England Fine Foods Special Diamond Awards 2013

I’m very excited and pleased to announce that Simply SeedZ has made it to the final stages of the Heart of England Fine Foods Special Diamond Awards in the category of Innovate!!

After submitting products and presenting my business case to a panel of food industry experts and answering their many questions (similar to Dragons Den!) I am delighted to have got this far, especially as a new comer in the food industry!

The winner will be announced on 18th May at a Gala Dinner at the Metropole NEC, Birmingham which will be hosted by Joanne Malin of BBC Midlands Today.

Best get a new frock!!

EASY BAKED BANANAS (FOR BREAKFAST)

As recommended by one of my customers, this is an easy and a delicious breakfast or desert, which is one of your 5 a day!

Bake a ripe banana with skin on in the oven on for 12 minutes. Slice in half, sprinkle with cinnamon and serve with natural yoghurt and a handful of Simply SeedZ Honey & Ginger Seed Mix.

Simple & good for you!

Irresistible Flapjack – Simply SeedZ Style!

For some reason, and with many attempts, I have never been brilliant at making flapjack but at last, my fruity flapjack recipe with a little chocolate on top, is a resounding success!

Great as a snack & perfect with a cuppa!

Full of goodness and of course containing lots of pumpkin and sunflower seeds!  If you want to have a go at making, here’s my recipe!

Ingredients

500g Simply SeedZ Apricot & Cranberry Bircher Muesli

155g butter/margarine

125g soft brown sugar

1 tablespoon golden syrup

Heat oven to 180c and line a baking tray (9 inch)

Melt butter & sugar together in large saucepan

Add syrup and mix.

Add Bircher Muesli & stir thoroughly.

Press into baking tray and bake for approx 30 minutes.

Leave in tin to cool.

Optional topping: melt some dark chocolate and drizzle over cooked flapjack.

Once cooled cut into slices and store in an airtight container. Should keep for a few days, if you can manage to resist!

Easy Mini Prawn, Lime & Chilli Fishcakes

An easy recipe that makes approx 18 small fishcakes, perfect to serve as a starter for 6!

Ingredients:

2 x large potatoes, peeled & cut into small chunks

1 x sweet potato, peeled & cut into small chunks

260g cooked prawns, chopped

2 x small chillies (red/green or both) chopped include seeds for extra heat!

Zest & juice of 1 x lime

100g Cajun Seed Mix

How to prepare:

Put potatoes & sweet potato chunks into pan of water and boil until soft, drain and mash thoroughly

Put prawns, chilli, lime juice & zest into mixing bowl and mix, add to mashed potato and mix thoroughly, season to taste.

Crush Cajun Seed Mix (use blender) until fine crumbs & put into a mixing bowl.

Using a desert spoon, take one spoonful and shape into small round shapes, and coat with crushed seeds.

Place fishcakes on a plate, cover and chilli for approx 1hour.

When ready to cook, heat oven to 180c & put fishcakes on a baking sheet. Cook for approx 20 minutes and serve on a bed of rocket with desert spoon of mango chutney.

 

 

 

2012 officially the wettest year on record??

cropped-Coughton-Court-Dec-2012.jpgI hope everyone had a good Christmas with family and friends and not too much over indulgence although, what a poor life we lead, if we cannot enjoy good food and wine in the company of those we love 🙂

So, its nearly New Year – 2013! Where did 2012 go…..but what a fantastic year to remember for some great British achievements:

  • Queens Golden Jubilee June (remember the river pageant in the rain??)
  • London 2012 Olympics August (drier fortunately with remarkable medal results)
  • London 2012 Paralympics September (wet again.. but how inspiring are these guys)
  • Kate & Will expecting their first child! (who cares about the weather!!! – a new Royal in line for the throne!

and even more exciting….

  • November, Simply Seedz launched new super duper packaging (even more exciting!!)

So here we are close to the end of 2012, and I’ve had a really great year, meeting lots of wonderful new customers at various interesting ‘foodie’ events/venues around the Midlands. Despite the weather, I attended Brockencote Hall, Mortimer Country Fair, Coughton Court Cheese & Pickle and Winter Festival, Whitbourne Hall, Breadfest nr Ludlow, monthly Worcestershire Farmers Markets at Malvern, Adam Henson’s Cotswold Farm Park, Stratton Audley Christmas Barn Food Festival to name but a few!

I joined Heart of England Fine Foods, which is an invaluable support to my business helping me with planning and managing my small business.

And in 2012, the following local stores agreed to stock Simply SeedZ products too!

Simple to make Bircher Muesli for Breakfast

My very popular Bircher Muesli recipe is just so easy to prepare for your breakfast tomorrow morning, with no cooking required!

Ingredients (to make 2 x 75g portions)

150g SeedZ Bircher Muesli Mix (Apricot & Cranberry or Banana & Blueberry)

150ml of apple juice or orange juice

1 tbsp low fat Greek yoghurt

Put all ingredients in bowl and mix thoroughly.

Cover and chill – for best results minimum 2 hours or preferably overnight.

To serve, grate some apple or slice some banana

If you want a slightly softer consistency, add a little more juice.

Once made your Bircher Muesli will keep for up to 5 days in fridge, if you can resist it for that long 🙂

Another weekend of foodie delights to be had at the The Eye Bread Festival, Luston, north Herefordshire.

Lots of food demonstrations, delicious local food producers with lots of tasters (of course I will be there too), music and morris men!!   There’s an Easy Peasy Cookery school for kids too!

Event is open from 10am – 4pm and will be officially opened by Maggie Ayre, producer of BBC Radio 4 Food Programme.

Free entry for anyone who brings a homemade loaf for the bread making competition!

Easy Summer Salad with Gorgonzola Cheese & SeedZ Recipe

Easy Summer Salad with Gorgonzola & SeedZ

This salad is a perfect accompaniment to any BBQ meat or fish and is one of your 5 a day!

Ingredients: 3-4 good handfuls of Mixed salad leaves (eg rocket, spinach, watercress, lollo rosso)

1 tbsp British Golden Rapeseed Oil

200g Gorgonzola cheese, cut into 1/2inch chunks

1 x packet of Worcester Sauce SeedZ

Put salad leaves into big serving bowl, add chunks of Gorgonzola and toss. Drizzle over rapeseed oil, add SeedZ and serve!

Other cheeses work well, especially parmesan broken into chunks too!
